April Jackson on Wellness, Mindfulness, and Restoration

Tips for being intentional, plus a green smoothie recipe.


As part of The Relishers’ #ShareTheMicNow collection, April Jackson shared a nutrient-dense smoothie recipe for our community, as well as how she saves and savors time. I love a good smoothie! It is a go-to for me some mornings. I have to confess, I do not make them as often as I used to and I miss that. I used to make smoothies EVERY DAY. So, I revisited my smoothie making during this time of quarantine. My suggestion is to be sure you use up fruits and veggies in the fridge that may not survive and stay fresh another day. Making smoothies is a great way to save yourself from wasting food. This is also another way to eat on the go as we are always rushing about. Everyone in my family drinks the smoothies that I make. That is no easy feat, as I have three teenagers. I sneak in all the nutrient-dense veggies and fruits I can and keep it balanced so we all get the macronutrients our bodies need. Here is an easy recipe to try. (Shhhh...do not tell them all the veggies you added, or do, maybe they will see that veggies can taste good!)


Green Smoothie (4 servings)

4 cups greens (I used spinach and/or spring mix)

2 peaches

1 cup blueberries

2 cups coconut water

4 scoops natural Whey protein

Blend all ingredients in a blender and serve immediately or store in an airtight jar for later.


A few more tips on smoothie-making: be creative!

Use different combinations of veggies, fruits, and liquids. I use almond milk, juices, water, and coconut waters. You can also add vitamins, additional spices (like cinnamon), herbs (lavender, mint, etc). A good blender helps. I use a Vitamix so it blends everything smoothly, especially the greens! You can use any blender you choose though. Use more veggies than fruit or juice so your smoothies are healthy. Finally, make it fun! Use fun cups, jars, glasses, and straws to drink your smoothies. Food can be fun, and presentation is everything.


How do I save time?


Great question! I look for ways to be present, which in turn helps me focus more on the tasks at hand. It prevents me from being distracted and in turn, helps me save time throughout my day.

REST is one way I savor my time. Intentional rest and engaging in the practices of sitting outside, meditating, reading, and spending time with my family.
